This is a revised and updated edition of his 1954 Fish Cookery cookbook. The book is organized alphabetically by type of fish and includes recipes for saltwater and freshwater fish, shellfish, and "terrestrial animals prepared like fish" such as frogs legs, snails and turtles. It includes recipes for fish commonly found at the fish market, as well as more unusual species such as eels, grunion, skate, and conch.
