Mama O’s Oatmeal Cookies ❤️🍪
Ingredients:
• 1/2 cup butter
• 3/4 cup dark brown sugar
• 1 egg
• 2 tsp vanilla extract
• 1 cup rolled oats
• 1 cup white whole wheat flour
• 1 tsp baking powder
• 1/4 tsp salt
• 1/2-3/4 cup raisins (or chocolate chips)
Directions:
1. Preheat oven to 350 degrees.
2. Wet ingredients: In a medium bowl, beat softened butter and dark brown sugar on with a whisk or using an electric mixer. Then, add egg and vanilla extract.
3. Dry ingredients: In a large bowl, mix together rolled oats, white whole wheat flour, baking soda and salt.
4. Mix butter and brown sugar mixture with the oats and flour mixture until just combined. Do not overmix.
5. Fold in raisins or chocolate chips.
6. Line two baking sheets with parchment paper or a silicone baking mat. Using a cookie scoop or spoon, scoop dough onto each baking sheet.
Dough should make about 20 cookies, but you can make them bigger or smaller if you prefer.
7. Bake for about 8 minutes until top is slightly golden brown and then cool on a wire rack. The cookies will be very soft but will continue to set as they cool.

• Add chopped walnuts, pecans or macadamia nuts, shredded coconut or m&ms
• Use ripe bananas instead of brown sugar if you want a cookie with less sugar
• Add a handful of mini marshmallows for a s’mores inspired cookie
• Add a scoop of peanut butter or peanut butter chips for a peanut butter version
• Add ground flax or chia seeds for an even healthier cookie
